Squash Soup Recipe
1 Cup steamed, then peeled Squash (use the winter squashes such as banana squash, hubbard squash, acorn squash, etc.)
1 Cup steamed, unpeeled Potatoes
3 Tablespoons Butter
1 Cup milk
Salt - Season to taste
- Peel potatoes and place in blender with rest of ingredients.
- Blend until thick and creamy.
- Heat until almost boiling, but do not boil.
- Serve.
