WALDORF ASTORIA RED CAKE


This is the recipe for the Waldorf Astoria Red Cake that my Mom made since before I could remember. This used to be something you rarely found, but now it is somewhat well-known as "red velvet cake." I personally think this recipe is better. And better still, the recipe for the frosting is the original frosting for the Waldorf Astoria Red Cake - not the cream cheese frosting that is commonly found with the red velvet cake these days. Enjoy!

3/4 cup crisco
2 1/4 cups sugar
3 eggs (whole)
3 1-oz bottles red food coloring
3 tsp. cocoa
1 1/2 cups buttermilk
1 1/2 tsp. salt
3 1/4 cups cake flour
1/8 cup cake flour
1 1/2 tsp. vanilla
1 1/2 tsp. soda
1 1/2 tsp. vinegar
1/2 tsp. baking powder

- Cream crisco, sugar and eggs. Beat until creamy.
- Mix food coloring and cocoa together and add to the first mixture.
- Mix salt with buttermilk and add alternately with sifted flour into first mixture.
- Add vanilla. Lastly add soda and then the vinegar and baking powder.
- Bake at 350 degrees for 30 minutes.
- Do not change the order of mixing.
- Makes 3 layers.
- (regular flour may be substituted and use only 3 1/4 cups flour).

WALDORF ASTORIA RED CAKE ICING

5 tbls. flour
1 1/2 cups milk
1 1/2 cups granulated sugar
1 1/2 cups soft butter
1 1/2 tsp. vanilla

- Cook flour and milk until thick.
- Cover and cool thoroughly.
- Cream butter and add sugar gradually and then the vanilla.
- Beat together until fluffy.
- Add to the flour and milk mixture.
- Beat together until fluffy.
