Pumpkin Shell Sweet Casserole
1 Ten-Inch Pumpkin
1-1/2 Cup Raisins or sweet, chopped Prunes
1/3 Cup Sugar
1/4 teaspoon Cinnamon
2-1/2 Cup peeled, chopped Apples
1 Cup chopped pecans
1 teaspoon Lemon juice
2-1/4 Cup sifted Flour
1/4 teaspoon Nutmeg
- Preheat oven to 350
- Serves 6 to 8 people.
- Wash and dry pumpkin.
- Slice off top for lid.
- Scrape out seeds.
- Mix together and then fill pumpkin with apples, raisins or prunes, and pecans.
- Add sugar, lemon juice, cinnamon, and nutmeg.
- Put lid back on pumpkin and place pumpkin on a cookie sheet.
- Bake until apples are tender.
- Begin checking after 40 minutes. (It may take 1 hour and 45 minutes.)
- Serve hot or cold with roast, ham, or poultry.
- Serve from the shell, spooning some pumpkin with each portion.
- Top with cool Whip or Sour Cream if desired.
