Chocolate Zuchini Cake
2 1/2 cups unsifted flour
2 1/2 tsp. baking powder
1 tsp. salt
1 cup chopped nuts
1/2 cup cocoa
1 1/2 tsp. baking soda
1 tsp. cinnamon
3/4 cup soft butter
2 cups sugar
3 eggs
2 tsp. vanilla
1/2 cup milk
2 tsp. vanilla
2 cups grated zuchini
- Combine in medium bowl the flour, baking powder, salt, nuts, cocoa, baking soda, and
cinnamon.
- In a large bowl, cream until smooth the butter and sugar.
- Add eggs one at a time, stir in vanilla.
- Add dry ingredients and milk alternately to creamed mixture.
- With a spoon, stir in zuchini.
- Pour into greased and floured 10' tube pon or bundt pan.
- Bake in 350 degree oven for about one hour.
- Test with toothpick, cool in pan 15 minutes.
- Turn out on rack or plate.
- When completely cool glaze.
GLAZE
2 cups powdered sugar
1 tsp. vanilla
3 tbls. milk
- Cut in thin slices to serve. It is more moist if allowed to "age" several hours before serving.
